GUMINASE-P is a specialized enzyme mixture designed specifically for the brewing industry. It consists of fungal ß-glucanases, pentosanases, amylases, and endoproteases, all carefully chosen to enhance the wort extract yield and the wort filtration rate when brewing with raw wheat or raw barley.The primary purpose of GUMINASE-P is to increase the wort extract yield by breaking down the cell wall constituents of the grains. This degradation facilitates better gelatinization of starch granules and allows amylases to more easily access their substrate, resulting in a higher extract yield. This is especially beneficial when brewing with high levels of raw wheat or barley.In addition, GUMINASE-P improves the wort filtration rate by hydrolyzing ß-glucans and pentosanes, which can contribute to better filterability during the brewing process.To achieve optimal results, GUMINASE-P should be added at the beginning of the mash process. It performs best at temperatures between 45-55°C and exhibits its optimum pH activity between 4.5 and 6.5.GUMINASE-P is conveniently available in powdered form and can be purchased in plastic or cardboard drums weighing 25-50 kg.For example, when brewing with 100% raw wheat, using GUMINASE-P in combination with exogenous amylases, the rates of enzyme addition should be expressed as a percentage of the weight of enzymes relative to the weight of wheat grains. This allows for precise control over the extract yield and the composition of sugars in the final product. Additionally, the presence of GUMINASE-P can also positively impact the filtration rate during the brewing process.Overall, GUMINASE-P is a highly effective enzyme mixture that enables brewers to optimize their brewing process when using raw wheat or barley, resulting in improved extract yield and enhanced filtration rate.
