GUMINASE is a powerful mixture of fungal carbohydrases specifically formulated for use in the brewing industry. This unique blend consists of ß-glucanases (ß1-3 and ß1-4 endo-glucanases), xylanases, and hemicellulases. Unlike other products, GUMINASE does not contain any proteases to prevent undesirable coloration of the wort and to preserve the crucial beer pro-foam proteins.GUMINASE exhibits excellent performance within the typical temperature range used in the mashing process, effectively breaking down carbohydrates throughout the brewing process. It remains active up to 75°C, making it suitable for various stages of brewing. However, it is important to note that GUMINASE becomes inactivated beyond this temperature threshold.With an optimum pH range of 4.5 to 6.5, GUMINASE is designed to effectively reduce the levels of ß-glucan, pentosane, and viscosity in the wort. This enzymatic action greatly facilitates the mash and beer filtration processes, especially when brewing with high quantities of raw grains, such as barley or wheat.To showcase the effectiveness of GUMINASE, let's consider two examples. In the first case, when GUMINASE is added to a sample of GATINAIS malt, the recommended dosage is 1 kg per 10 tons of malt. Alternatively, for a mixture containing 75% malt and 25% raw wheat (EBC conventional mash), the recommended dosage is 3 kg per 10 tons of malt or 1 kg per 1 ton of raw wheat.Overall, GUMINASE is a reliable and efficient solution for brewers looking to enhance their brewing processes, reduce viscosity, and improve filtration performance, particularly when working with raw grains.
