GUMINASE-P is a specialized product designed for the brewing industry. It is a unique blend of fungal ß-glucanases, pentosanases, amylases, and endoproteases, carefully selected to enhance the processes of wort extraction and filtration when using raw wheat or raw barley.One of the primary purposes of GUMINASE-P is to increase the yield of wort extract. By degrading the cell wall constituents, it improves the gelatinization of the starch granules, allowing amylases to more easily access their substrate. This is particularly beneficial when brewing with high levels of raw wheat or barley.Additionally, GUMINASE-P works to improve the filtration rate of the wort. By hydrolyzing ß-glucans and pentosanes, it helps to remove these compounds that can often cause clogging and slow down the filtration process.For optimal results, GUMINASE-P should be used at a temperature range of 45-55°C and at a pH level between 4.5 and 6.5. It is recommended to add GUMINASE-P at the beginning of the mash.GUMINASE-P is available in a convenient powder form, packaged in plastic or cardboard drums weighing 25-50 kg.To illustrate its effectiveness, GUMINASE-P can be used in specific brewing scenarios. For example, when brewing with 100% raw wheat and employing exogenous amylases, the addition of GUMINASE-P at a certain rate (% w/w enzyme/wheat grains) has shown positive results in terms of extract yield, total sugars, maltose, maltotriose, glucose, and free amino nitrogen.
