ENDOINASE is a high-quality, food-grade enzyme mixture specifically designed for the brewing industry. It contains vegetal endoproteases standardized to 500 tyrosine units along with a proteic hydrolysate. These endoproteolytic enzymes have the ability to hydrolyze proteins, peptides, amides, and amino acid esters, with a preference for basic amino acids like leucine and glycine.The main purpose of ENDOINASE is to increase the free amino-nitrogen content during the brewing process, especially when using high levels of raw wheat. This enzyme mixture helps to break down the proteins in the wheat, releasing more amino-nitrogen and improving the overall quality of the brew.For optimal performance, it is recommended to maintain a temperature range of 45-55°C during the brewing process. The enzyme also works best at a pH range between 4.5 and 6.5.To apply ENDOINASE, simply add it at the beginning of the mash. It is available in a convenient powder form, packaged in either plastic or cardboard drums weighing 25-50 kg.Safety is a top priority, and ENDOINASE is produced in compliance with the FAO/WHO JECFA and FCC recommendations for food-grade enzymes. The enzyme is tested to ensure a maximum limit of 5 x 10^4/g for total count and 10^2/g for molds.An example of how ENDOINASE can be used is in 100% raw wheat brewing. By incorporating exogenous amylases, hemi-cellulases, and ENDOINASE at appropriate rates (% w/w enzyme/wheat grains), brewers can achieve higher yields, increased total sugars, maltose, maltotriose, glucose, and free amino acids, enhancing the overall flavor and aroma of the final product.
