Our California Prunes are harvested between August and October, utilizing the optimal climate conditions of the region. Conversely, South American Prunes are ready for harvest as early as March due to the climate in that region. To ensure the perfect moisture content, our prunes undergo a meticulous flue-curing process until their moisture level reaches the ideal fifteen percent.
When it comes to removing the stones, we employ two methods for your convenience. Ashlock pitted prunes have their stones pushed out using a traditional thorn technique. On the other hand, elliot pitted prunes involve the removal of the stone sideways with several thorns, ensuring a seamless eating experience.
For those who prefer prunes that are ready-to-eat, our selection offers prunes with a slightly higher moisture content of up to a mellow thirty-five percent.
