GUMINASE is a powerful blend of fungal carbohydrases, including ß-glucanases, xylanases, and hemicellulases. This carefully calibrated combination of enzymes does not contain any proteases, ensuring that it does not cause unwanted wort coloration or compromise the integrity of the beer's foam proteins. With a temperature range of up to 75°C, GUMINASE remains highly effective within the typical temperatures used during mashing. It is important to note that GUMINASE loses its activity beyond this temperature threshold. GUMINASE demonstrates its optimum efficacy within a pH range of 4.5 to 6.5. The main purpose of using GUMINASE is to reduce the levels of ß-glucan and pentosane content in wort, as well as to decrease its viscosity. In doing so, it greatly facilitates both mash filtration and beer filtration, especially when using raw grains such as barley or wheat at high levels.For example, when GUMINASE was added to a sample of GATINAIS malt or to a mixture of 75% malt and 25% raw wheat in a conventional mash according to the EBC method, the following effects were observed:- Addition of 1 kg of GUMINASE per 10 tons of malt (A)- Addition of 3 kg of GUMINASE per 10 tons of malt (B)- Addition of 1 kg of GUMINASE per 1 ton of raw material (C)These details showcase the versatility and efficacy of GUMINASE in optimizing the brewing process and achieving desired results.
